  • 120g Co-op British carrots, peeled and sliced diagonally
  • 1 green pepper, deseeded and chopped
  • 1 onion, sliced
  • 2 cloves garlic, peeled and finely chopped
  • 150g Co-op cous cous
  • 1/4 tsp cinnamon
  • 1 red chilli, deseeded and finely chopped
  • 1 tsp paprika
  • 1 tbsp tomato purée
  • Handful fresh mint, chopped (optional)
