  • Juice of 1 lemon
  • 60g halloumi, thinly sliced
  • 125g Co-op piccolo tomatoes, halved
  • 1/3 cucumber, chopped
  • 100g radishes, quartered
  • Handful each flat leaf parsley and mint, roughly chopped (optional)
